JennyMac's Peach Gazpacho:In a food processor:
4 large peaches, sliced
1/2 large cucumber
1 small tomato
1/4 c. cilantro
2 T. olive oil
2 T. white wine or champagne vinegar
1 t sea salt
sprinkle of black pepper
1 T. sriracha
Blend. Add more vinegar, olive oil and sriracha to taste. Chill for an hour. Serve with sprinkle of cilantro, tortilla crumbles or avocado.
