With football season in full throttle, there are great opportunities for me to make highly tasty concoctions for JMac on Sunday game days. JMac can eat ANYTHING, seemingly in any quantity, and still maintain the body of a Greek God. I mentioned recently about this Buffalo Chicken Dip we tried at a friend's get together. It was sinful and apparently, magical because two words I don't like paired up and dancing together are Buffalo and Chicken. BUT, this dip is absolutely fantastic. Warm, rich, creamy but I didn't have the recipe so I did some kitchen improv (several times, of course, for the benefit of my husband, and several of his friends.) Now I want you to get into the mix as well. Perfect for all the upcoming holiday soirees too, and maybe you will need a break from pumpkin by then. And you can make this will the fat-free versions of ranch, cream cheese, grated cheeses as well for a healthier twist. From my kitchen to yours, enjoy every bite.
Buffalo Chicken Dip
Ingredients:
Poach 3 chicken breasts and shred when cooled. (If you haven't poached, it makes the chicken incredibly tender. Google it to learn. It is very easy.)

1 cup ranch dressing (or bleu cheese if you are down with the funk)
1/2 cup Frank's Red Hot buffalo sauce (or Texas Pete's buffalo sauce)
1/2 cup grated mozzarella
1/4 cup grated cheddar
Blend in chicken.
Pour into a 8x8 dish and sprinkle top with another 1/4 c grated cheddar. I also drizzle a little more buffalo sauce over the top. Bake at 350 for 20 mins. Serve with tortilla chips, crackers, or sliced vegetables. Try not to eat it all at one time.

I make a very similar recipe for anything we go to requiring me to bring a dish. In fact- there is some in my fridge right now! LOVE this stuff!!!!

That made me laugh out loud. : ) Whenever my dad goes to a restaurant, he always asks, "Does the bleu cheese have chunks in it?" When the waiter/tress says "yes", he asks for ranch. Uhh, dad? A good bleu cheese dressing HAS chunks in it!
